Menu Plan Monday & First Day back to school!

It was the first day back to school for the girls today! Things went fairly smooth ..just got to get back into the groove of things! I am homeschooling the girls so it's back to lesson plans and grading papers for me! 😝 I wouldn't trade it for anything though. I know one day I will look back and will be wishing that I was still at home ..homeschooling the kids! Time flies by so fast! No pictures today because I totally forgot! We hit the ground running first thing!

My menus for awhile will be something quick an easy! May be a lot of crock pot meals. Lol! Not only do we have school but it's also getting closer to show cow season and soccer season.

Monday: Taco soup with fixings (yes it is HOT in The South but I can't wait any longer for my taco soup fix)

Tuesday: Stew beef & rice, potatoes & carrots(crockpot)

Wednesday: Chicken Casserole, squash, green beans

Thursday: Tator Tot Casserole, English peas, Corn

Friday: Steak & Potato, salad

Saturday: Momma's going on a River Boat cruise😃 but Matt and the kids will have Spaghetti with fixings

Sunday: BBQ pork chops, corn of the cob, slaw, baked beans

Recipe share time!

Tator Tot Casserole
1 lb ground beef (cooked)
1 can of cream of mushroom soup
1 can of cream of celery soup
8 oz graded cheddar cheese
Tator tots

Put in pan in order above with Tator tots on top. Bake 30 mins @. 350•

Wednesday: Cheesy Crockpot Chicken (recipe share below)

Thursday: Kitchen Closed

Friday: BBQ, Slaw, Chips

Saturday: Cheeseburger Soup

Sunday: Chicken Pot Pie/ Christmas meal at Church PM- Baked Ziti

Cheesy Crockpot Chicken
2 pounds boneless, skinless chicken breasts
1 can cream of celery soup
1 can cream of mushroom soup
1 can condensed cheddar cheese soup
1/4 tsp. garlic powder
1/4 tsp. onion salt
1 can of mushrooms or use fresh sliced
8-10 oz. of low-fat or fat-free sour cream
Place chicken in crockpot. Mix the undiluted soups together with the garlic powder and onion salt and pour over chicken.  Cover and cook on low 6-8 hours.  About 15 min. before serving, cut up or shred the chicken and place back in crockpot.  Add sour cream, stir well and low to heat up.  Serve over rice! Enjoy!

So here’s a tip that saves my family money & it saves me TIME!  Menu Planning! Usually I plan my meals like say .. on a Saturday or Sunday.  I make my menu for the whole week.  Then I make a list of ingredients that I need for that week.  I try to “STICK TO THE PLAN” during the week, but, I don’t stress out if things don’t always go as I plan. 😉

I made out this meal plan on Saturday, & Only spent $90 at the grocery!  You do the math..
$90 for a family of 5. That’s $18 per person for a WEEK of food.  That’s $3.60 a day. Well,.. that’s only supper & breakfast, & sandwiches for the kids at lunch.

Menu Planning makes my day/WEEK.. a whole lot better! On the days we’re away.. doing ball games.. it’s a Crock-pot night;) I might add that it helps to also have a good stocked pantry with main ingredient items on hand.  For example.. 2 things I always have in my pantry.. cream of chicken & cream of mushroom soup! You can create a quick, and easy meal in minutes with these items on hand. 😉  Need help creating your pantry list try this site.

SUNDAY= Taco Soup/Chips

MONDAY= Spaghetti Bake/Garlic Bread

TUESDAY= Fish & Grits/ Hush Puppy/ Coleslaw

WEDNESDAY= Crock-Pot Savory Pot Roast/Corn/ Peas

THURSDAY= Crock-Pot Sausage Jambalaya

FRIDAY= Hamburgers/Fries

SATURDAY= Kitchen is CLOSED! 😉

Here’s a recipe that IS SURE to be a HIT with the kids! I found it and modified it a little bit. I actually made it a little easier for us busy moms! It’s kid tested and Mother A*pproved.. & I’m not talking about K*ix cereal.

Macaroni and Meatballs

1 pkg. Kraft cheese and macaroni dinner

1 pkg. of (frozen) fully cooked Italian meatballs

1 tsp. of onion powder

2 tlbs. margarine

1 can of cream of mushroom soup

1/2 cup milk

shredded cheddar cheese

Prepare macaroni dinner as directed. In a pan brown meatballs in butter & sprinkle with onion powder. Stir in soup and milk. Simmer on low for 3min & stir. In a greased 1 1/2 quart casserole dish, mix together macaroni dinner and meat mixture. Cover with cheese and bake @ 350 degrees for 20 mins.

Tuesday= Macaroni and Meatballs, fresh peaches

Wednesday= Simple Stew, crackers, and a side Ham sammy

Thursday= BBQ pork chops, salad, broccoli salad

Friday= Taco’s, chips & salsa

Saturday= Cookout

Sunday= Chicken casserole, corn, green beans, apple pie w/ ice cream.

This is my first time participating in Orgjunkie’s Menu Plan Monday. However, it’s not the first time that I have menu planned for the week. I learned it from Amy, my good friend over at FOXyMa. She taught me Menu Planning & how it really frees you up and you don’t have to sit & THINK about what your having at night for supper! Thanks Amy!! It’s really Great but, it does take effort to sit down.. gather recipes and make a plan. When I do use this method.. it seems that my family is much happier,.. as long as I use “kid-friendly” recipes! ;0) So..without further a-do.. here’s my menu for this week. YAY!! I included lunch too, because.. all the kids are home & I don’t want them to have a ham sammy & chicken nuggets everyday!

Monday:
Lunch- Ham N’ Cheese Roll-ups, cheese puffs(alot planning going on!), & fruit.
Dinner- Sweet & Sour Pork, Rice, & Fresh Green Beans

Tuesday:
Lunch-Salmon Patties, fries, cheesy grits
Dinner-Chicken Stir Fry, Rice, Stir fry Veggies, Mandarin oranges

Wednesday:
Lunch-Mini-Meat loaves with cheese topping, mashed potatoes, green beans
Dinner-Corn dogs, chips..(it’s church night) hurry,,hurry,,hurry

Thursday:
Lunch- Chicken Caesar Sandwiches, chips, fruit salad
Dinner-Bacon Cheeseburger Roll-ups

Friday:
Lunch- PB& J, chips, fruit
Dinner- Grilled Chicken, potato salad, baked beans, & garlic bread

Sat: KITCHEN CLOSED

Sunday:
Lunch- Pot Roast with veggies, rice, peas, fresh stewed squash, Frozen Lemonade Pies.
Dinner-Leftovers!

I found two new helpful sites that I love. First is Recipezaar! It’s great! It has thousands of different recipe’s and it can even make a grocery list for you! The next one is kraftfoods.com .
This site has many Easy recipes that are Kid friendly. My kids are I’m sure like all the rest.. they love the basics… chicken tenders, spaghetti, tacos…etc. I like to try things new.. so this may be a little challenge .. trying to find something they can enjoy as much as Matt & I! A couple of weeks ago.. I tried a Tuna Noddle Casserole. Oh.. my, I loved it.. but the children however,.. said.. Momma.. it’s okay. I don’t want to make something that’s okay for them.. I want them to say WOW, I love it! kidda like B-man did when he had that fried tater sandwich Sat. LOL! Very healthy people, very healthy!!
okay.. so.. leave me some comments.. got any fab recipes you can share that kids love.. or maybe a website I need to try!!!!
